Very simple, amazing flavour, and so healthy
Heat oven to 200C
Toss tomatoes and garlic in a little olive oil and S&P on an oven tray. Roast for 20-25 min or until slightly charred.
Insert Multiblade in Cook Processor. Add capsicum and onion. Quickpulse for 5 sec. Scrape down sides. Repeat if necessary.
Add potatoes and a dash of olive oil.Remove measuring cup. Time 5min, Temp 110C, Speed 1. Start.
Add chilli, stock and S&P. Time 15min, Temp 90C, Speed Int. Start
Add roasted tomatoes and garlic together with any residual juice. Add basil. Time 2min, Temp 100C, Speed Int. Start.
To puree the soup, gradually bring the Speed to 8. Let run for 1 min.
Serve with parmesan and crusty bread.
