This is such a simple lunch box filler and so easy.. Put whatever veggies you want in it. And you could even substitute the flour for GF Flour...


  • 5 Eggs
  • 1 cup SR flour
  • 150g Carrot, grated
  • 1 large Onion, finely diced
  • 1 cup Cheddar cheese, grated
  • 400g Zucchini, grated
  • 3 rashers Bacon, chopped
  • 1/2 cup oil

Step 1

Preheat oven to 180c.

Step 2

In the bowl of the Salad Maker beat the eggs until combined.

Step 3

Add the diced onion, bacon, cheese,oil and flour. Beat until smooth.

Step 4

Place grater blade and mandolin top on the salad maker and grate Zucchini, carrot,(any other veg you wish ie. sweet potato, fresh asparagus)into the mixture.

Step 5

Stir to combine

Step 6

Pour into the Square Roaster

Step 7

Place into the oven for 30 mins or until cooked through.

Step 8

Allow to cool for 10 mins before turning out onto a wooden chopping board and slicing.

Step 9

Refrigerate or freeze.. Enjoy...

Chef's Tips

Great to individually freeze in zip lock bags so the kids can just grab out of the freezer and put in their lunch boxes... If it even makes it to the freezer!!

What is a rasher and also the quantity of carrots and zucchini needs to be converted to American measurements.
