Super quick and easy and packed full of flavours!


  • 1 punnet sliced mushrooms
  • 200g rindless bacon, chopped
  • 2 Zucchinis grated
  • 1/2 Sweet Potato Grated
  • 2 Carrots grated
  • 1 onion diced
  • 12 Eggs
  • 300ml cream
  • 1 green or red capsicum
  • 1 cup frozen peas & corn
  • 2 handfuls spinach
  • 1/4 cup Plain flour
  • 1 packet of French onion soup mix
  • 1 cup Mozzarella cheese

Step 1

Pre-heat oven to 180°C.

Step 2

Mix well all the ingredients (except eggs, cream & French onion mix) in the Square Roaster or in a Bowl.

Step 3

Whisk eggs, cream and French Onion in a bowl together and pour over vegetables. Mix through.

Step 4

Cook in the oven with Lid on for 15mins, then take lid off and cook for a further 15min.



Great flavours. I would recommend if you cook in your28cm Saute pan to reduce the amount as it struggles to fit as compared to the roaster.
